優格綿密蛋糕

簡單做低負擔的優格綿密蛋糕,只用4種材料:雞蛋、 糖 、優格、 麵粉
此款蛋糕用了大量優格所以不放奶油口感也很綿密,大人小孩都愛吃
附上作法

食材

蛋黃糊: 蛋黃4顆,低筋或中筋麵粉80g,無糖優格160g,糖15g
蛋白霜: 蛋白4顆,糖 55g
白醋或檸檬汁 5cc( 也可省略)

步驟:
  1. 蛋黃糊的材料全部倒在一起 用打蛋器快速攪拌均勻至無粉狀
  2. 蛋白放在乾燥的容器, 用打蛋器 打至濕性發泡後 倒入檸檬汁 和糖(分兩次)再繼續打至硬性發泡( 倒扣無流動)
  3. 烤箱預熱10分鐘
  4. 蛋黃糊分三次倒入蛋白霜中攪拌,( 用刮棒由下往上拉起輕輕攪拌均勻)
  5. 攪拌好後倒入杯子內(我用12個小杯子) 再拿起輕敲桌面 兩三下將空氣敲出
  6. 烤箱150度烤40分, 如烤到完未上色 再用170度烤五分鐘上色就完成了( 但每家烤箱 溫度不同 需注意 勿烤焦)
  7. 完成後再灑上檸檬皮屑增加香氣
