穀粒巧克力餅

這餅乾有多好吃呢?外表看起來粗曠,咬起來感覺酥脆,在口中可以瞬間融化,有著巧克力入口即化的細膩個性,穀物爆米花是屬於非常輕脆鬆的食材,完全不耽擱入口即化的層次感,兩者結合剛好是完美的100分。關於食譜配方和製程,整理如下。

材料:
  • 奶油 150克 
  • 糖粉 60克
  • 低筋麵粉180克(過篩)
  • 深黑可可粉40克
  • 果乾穀粒80克 
前製作業:
製做前30分將奶油放室溫軟化
糖粉過篩
低筋麵粉和深黑可可粉一起混合 過篩

作法:
  1. 奶油回溫(軟化狀),加入糖粉攪拌至絨毛狀。 
  2. 加入低筋麵粉與深黑可可粉,以刮板不規則壓拌麵糊。
  3. 加入穀粒脆片,輕輕壓入麵團。
  4. 取20-21克麵糰請捏成圓球狀,約24顆,每顆等距排列(6*4=24),輕壓成厚度1公分的長橢圓狀。 
  5. 箱烤170-180預熱,烤20-25分,原則仍以餅乾烤上色作為出爐之判斷。 
這款餅乾因為內含穀粒,體積非常有份量,吃起來也很有滿足感,甜度適當,非常適合搭配無糖美式咖啡一起品嚐。
