發酵優格的時候,容器蓋子要蓋上嗎?

#以衛生考量來思考
  1. 優格容器蓋子的衛生程度一定比優格機外蓋 乾淨,優格吃完後 蓋子和容器一起清洗,晾乾後也會一起收納起來。但優格機的蓋子不會每次做完優格都洗一次。
  2. 液體遇熱會有水蒸氣凝結在蓋子上方,聚集成水滴有時會滴下來在優格上。如果是從比較髒的機體外蓋滴下來,污染優格的發生率會較高,保存期限也會縮短。
#塑膠蓋子不會有毒溶出在優格里
  1. 蓋子沒有直接碰觸到鮮奶
  2. 發酵溫度只有41-43度 (PP耐熱至少100度、PE PVC 耐熱至少60度)
我做優格一定都蓋上蓋子,發酵完成從優格機取出的時候,都是從透明容器來判斷凝固情形,儘量避免將蓋子打開,以確保優格的保存期限,並將污染降到最低。
