💛 優 格 起 士 蛋 糕

配方:優格280g/油85g/蛋白10顆/蛋黃10顆/糖120g/玉米粉40g/低粉130g/乳酪粉180g/鮮奶70g/白醋6cc

做法:分蛋法 ~優格+鮮奶+油加熱到冒小泡泡熄火加入過篩粉類拌勻+蛋黃拌勻

蛋白霜打至有泡沫+白醋再打至泡沫變細+糖(分次慢慢加入)打至蛋白霜呈現小彎勾,再取1/3蛋白霜加入蛋黃糊裡用打蛋器輕輕轉圈圈拌勻,再加入剩下的蛋白霜裡面用畫圈圈的方式拌勻#蛋黃糊加入蛋白霜可先只把蛋白霜攪散)小深烤盤舖烘焙紙,拌勻的蛋糕糊整盆先敲15下,入模後再敲15下

水浴法烤:170/160 烤60分鐘(上色很深後可以蓋錫箔紙,時間到可用蛋糕試針試是否有熟透,出爐後重敲一下,馬上放網架上撕開四邊烘焙紙,蓋上白報紙至完全涼透切條狀
