優格配方馬德琳

這是我自己調整過且感到滿意的配方,甜度和油脂適中,香氣和柔軟度也讓人覺得舒服。利用家裡的Vitantonio鬆餅機,就可以快速製作一整盤的迷你馬德琳。以下配方剛好是市售塑膠擠花袋的一滿袋麵糊份量!至少可以烤出35顆迷你馬德琳呦! 
  • 奶油150克 
  • 雞蛋3顆(每顆蛋約60克) 
  • 手工優格60-70克 
  • 砂糖80克 
  • 低粉200克 
  • 泡打粉2小匙 
  • 可可粉20克(或抹茶粉10克) 
  1. 奶油融化約40度,粉類過篩備用 
  2. 雞蛋和砂糖攪拌充分混合,加入優格混合,加入粉類混合,最後加入融化奶油攪拌混合,靜置約20分。 
  3. V牌鬆餅機烤3分15秒
