開學了,土司ㄧ定要準備好

山型優格土司直接法

用(麵包機國際牌2000BMT)操作
  1. 高粉700克 
  2. 酵母7克 
  3. 糖100克 
  4. 雞蛋+牛奶+優格共500克(可留ㄧ些全蛋液在入爐前刷在土司表面上) 
  5. 鹽7克 
  6. 奶油65克 
作法:
  1. 將材料1.2.3.4.放入麵包機啟動揉麵模式攪拌麵團,約8分鐘後放入材料5,約10分鐘時再放入材料6至行程結束。 
  2. 再次啟動麵包機揉麵模式攪拌麵糰約7-9分鐘後按取消鍵。 
  3. 啟動麵包機發酵模式進行第一次基發約60分鐘 
  4. 取出麵糰分割約155克9個麵糰桿捲2次後,每個土司模放入3個麵糰,12兩土司模共3個。 
  5. 麵糰發至八成時將土司放入已預熱180/220的烤箱中烤35-40分鐘,烤約12分鐘時拿ㄧ張錫箔紙蓋在麵包上(防上色太快)每台烤箱有自己的脾氣,烤溫僅提供參考。 
備註:入烤箱前可以刷ㄧ些全蛋液或是牛奶在土司的表面。我這次沒刷,只有在入爐前噴了一些水。
