抹茶優格卡士達蛋糕卷

這是一款在品嚐後會讓人微笑的幸福甜點,兒子說好好吃,並期待下次可以包捲更多的卡士達餡,這個餡料可是用優格和異麥芽寡糖調理的,風味非常清爽,尤其是甜味非常適口,難怪會讓兒子一吃就深深愛上它。

這是屬於非常低熱量的一款甜點配方,我本身非常熱愛蛋糕卷,雖然戚風蛋糕還一直烤得不夠理想,烘焙基礎還很薄弱,但說起蛋糕卷,我的雙眼就發亮,那是因為我很熱愛它。我使用的工具是好先生烤箱,烤盤約54.5*33*3.5公分,我以這樣的工具為基礎,玩出自己的理想配方,這裡烘焙達人很多,小女子的這配方僅供大家參考喔!

蛋白霜
蛋白330,砂糖80,檸檬汁5

蛋黃糊
蛋黃120,玄米油35,優格90,低筋粉150

大理石紋路 森半抹茶粉5

卡士達餡
蛋黃70,異麥芽寡糖漿45,低粉20,優格200,奶油80,鹽0.5,森半抹茶粉10

上火190/下火140,烤22分。

捲蛋糕的時候,先想好,預備,起始端滾輪一轉動就盡量一次捲到終點,捲好固定後收冷藏存放半天。
