原味優格冰棒

所有優格冰棒中,我最愛這款原味,發酵優格的時候在鮮奶裡加了50公克異麥芽寡糖,先使優格發酵的更紮實更綿密更滑稠,製作冰棒的時候再加入適量的異麥芽寡糖,這樣的優格冰棒吃起來有一種"鬆綿鬆綿"的口感,好奇妙喔!每次吃優格冰棒的時候都不自覺的微笑,好療癒!

優格冰棒的做法很簡單,優格和異麥芽攪拌在一起,比例約10:1.5,攪拌均勻後倒入冰棒模型,冷凍12小時。

異麥芽寡糖是乳酸菌的養料,能讓優格發酵得更綿密更紮實更滑稠,寡糖在發酵過程中已經被乳酸菌消耗了,所以優格並沒有明顯的甜味喔!這只是讓優格發酵得更好的一個小心機! 當製作冰棒的時候,加入的異麥芽寡糖量才是冰棒的實際甜度喔!
