蔓越莓優格麵包

材料:
500g的高粉(山茶花+凱薩琳)
40g上白糖
4g鹽
奶油60g
優格167g (大部分是乳清如果是優格大概要增加水或鮮奶)
水122g
鮮奶50g ---調整團用可以自行增減
奶粉40
蔓越莓70g
酵母粉5g
------------------------------------------------------------------------
做法
  1. 高粉.水.奶粉.糖.鮮奶.鹽(酌量增減)優格放入攪拌機拌勻就好,麵糰放放冰箱冰30分鐘
  2. 冰30鐘過後加取出打到麵糰出筋經 加酵母.加奶油打最後加蔓越莓 終溫27度
  3. 第一次發酵溫度35度40分翻面20分
  4. 分12小塊整型圓形
  5. 第2次發酵35度40分.灑高粉.畫線
  6. 熱烤箱190度
  7. 烤約20分鐘
為了清冰箱..做出來的麵包
