依思妮優格(發酵酸奶油)

布布姐很喜歡吃優格生乳捲,生乳捲好吃秘密關鍵是把乳脂肪發酵,發酵的時候還會加入適量異麥芽寡醣,目的是為了提升乳酸風味。

什麼是「漂亮的乳酸風味」呢?
用一個比較具體的形容,大家都有喝過養樂多吧!喝完養樂多之後口中會留下微微的乳酸尾韻,那個尾韻就是布布姐說的漂亮乳酸。

依思妮奶油發酵後的質地較偏軟,但不影響打發,相較於其他品牌動物鮮奶油,就依思妮的乳酸風味最漂亮,口感最輕盈,打發後軟化速度也快,操作難度較高一些。
